Broccoli Chicken Cassarole

1 chicken breast cooked and cubed
1/2 bag broccoli frozen(thawed)
2 c. rice(instant)
2 small or 1 large Cream of chicken or mushroom soup
equal cans of milk to soup
2/3 c miracle whip
2 tsp lemon juice
1 cup cheese(grated)
Optional to sprinkle on top:
breadcrumbs, crackers or cornflakes
par. cheese

Can Cooker Beef Stew

4 lbs potatoes, washed, peeled (or not)
1 lb baby carrots
1 lb cubed beef
8 cups vegetable juice or V8

1-1/2 tsp onion powder
1 tsp garlic powder
1 tsp cornstarch
1/2 tsp paprika
1/2 tsp celery salt
1/4 tsp bay leaves
1/4 tsp Montreal steak seasoning
1-1/2 Tablespoons beef bouillon

Chicken Alfredo Parmesan for 2

1-2 chicken breast or 6 strips
Spicy Italian dressing(or regular)

1 small tomato- This will make a thin layer on the top of your pasta.
1/4 tsp of basil or 2 leaves.
1/8 tsp of garlic
1 Tbl of extra virgin oil

Alfredo sauce

Chicken Enchiladas

Flour shells(about 6)warm for better roling
canned chicken(12 1/2 oz.)
grated cheese cheddar
onion powder or onions
garlic powder
jalapeno pepper
cyan pepper

1/2 cup sour cream
1 small can cream of chicken
season to taste with above seasonings

Simple Sweet Teriyaki Chicken

1 large (or two small) chicken breasts
1 cup of rice (uncooked)
3-4 cups of stir fry vegetables

1 cup of water
2 tbl corn starch
1/4 to 1/3 cup of brown sugar
1 3/4 to 2 Tbl soy sauce
1/8 tsp ginger powder
1/8 tsp garlic powder
1/4 tsp onion powder
3/4 Tbl hoisen sauce
dash of black pepper
1/8 tsp sambal oelek (optional)

Southwest Chicken Tacos

6 large flour shells
1-1/2 cups shredded cheese (any kind you like)

1 can chicken
1 can black beans (rinsed)
1 can diced tomatoes with chillies
1 cup corn
1-1/4 tsp chili powder
1/2 tsp taco seasoning
1/16 tsp tumeric

Spicy Italian Chicken Wraps

1 large chicken breast - 3/4" cube
1 T dried green and red peppers (or 2-3 T diced fresh peppers)
1-2 T Jalapenos
Big pinch of cilantro
1/8 tsp black pepper
1 T taco seasoning
3-4 T of Spicy Italian Dressing (Ranch could also be good)
2 Wheat wraps (8-10")
1/4 c shredded cheese

Thai Mango Chicken

2 large chicken breasts, 3/4" to 1" cubes
2 1/2 c uncooked jasmine, white or brown rice (7-8 c cooked)
2 mangos, 3/8" cubes
1 tsp thai basil (or about 1 tsp basil and a pinch of mint)

Sweet Chili Sauce
2/3 c sugar
2/3 c water
4 tsp corn starch
3 tsp hot ground chili paste (sambal olek)
2 tsp minced garlic or 1/8-1/4 tsp garlic powder
4 tsp cilantro (add after above is heated)

Mango Sauce
half of the cubed mango (or one 16oz can of peaches, less juice)
1/2 c chicken broth
1/4 tsp chili powder
1 c Sweet Chili Sauce (see above, use it all)
1 tsp lemon juice
2 T soy sauce
1 T lime juice
