Can Cooker Beef Stew

Cook Time: 60 minutes

Ingredients
4 lbs potatoes, washed, peeled (or not)
1 lb baby carrots
1 lb cubed beef
8 cups vegetable juice or V8

1-1/2 tsp onion powder
1 tsp garlic powder
1 tsp cornstarch
1/2 tsp paprika
1/2 tsp celery salt
1/4 tsp bay leaves
1/4 tsp Montreal steak seasoning
1-1/2 Tablespoons beef bouillon

Instructions
1) Wipe down the Can Cooker with oil, don't forget the rack.
2) Toss the beef cubes in a plastic bag with a few tablespoons of flour and whatever spices you'd like to season it with.
3) Load it up with the potato chunks, carrots and all of the listed spices. Pour in the vegetable juice, toss in the meat.
4) Seal up the Can Cooker and warm it up until the steam comes out. If you can adjust the heat, keep it so it is steaming, but not shooting a huge stream into the air - it will dry out your food.
5) After it steams, let it cook for about an hour. You may want to check the meat after 45-50 minutes to see how it is going.
6) Enjoy.

Notes
Cut the potatoes in large chunks, 1-1/2" thick is OK, they will cook through.

You may want a large, shallow pan to dump the stew into for serving.
